Our Love of Veg
We’re mad about veg here at Higgidy. From the flavours and textures to wonderfully vibrant colours – we adore everything about it. So much so, that over 70% of our range is either veggie or plant based and packed full of delicious real veg (you’ll find no fake meat here!).
Without further ado, let us take you on our very own Higgidy veg journey…
It all started at the beginning
Camilla first began baking Higgidy pies after she spotted a gap in the market and opportunity to create delicious premium pies with more exciting flavours, textures and colours. Using different ingredients, primarily veggies, the pies she created would be made with interesting, clever flavour combinations, such as our Spinach, Feta & Pine Nut Pie, that would add a splash of much needed colour to the beige and boring supermarket shelves at the time.
From way back when she started baking pies in her very own kitchen to now, Camilla has always been busy experimenting with new flavours by roasting, chopping, mashing and squashing different varieties of veggies into pies, quiches, rolls and more.
“Although a typical day at Higgidy often involves taste-testing new recipes, the majority of my cooking and experimenting actually takes place in my kitchen at home. And I can honestly say that as result, I’ve found myself (and my family) enjoying cooking and eating more veg than ever before. The hope is that with our vibrant veggie range and host of recipes, we can inspire you to do the same.” – Camilla, Higgidy Co-Founder
The first ever Higgidy veggie pie also happens to be our best-selling recipe. Our Spinach, Feta & Pine Nut Pie, made with seeded spelt shortcrust pastry, a creamy filling of spinach and Greek Feta, a hint of nutmeg, hand-topped with red peppers, even more Feta and toasted pine nuts, is a firm favourite for good reason , but don’t take our word for it, here’s what a couple of our customers think…
“I’ve been eating these pies for years now. I discovered them while I was working in offices around London and now, years later and retired, I still buy them as a lunchtime treat. Having just cooked one I dissected it to marvel at the ingredients again – a masterpiece of healthy stuff.”
“I could count on the fingers of one hand the number of times I’ve been prompted to write and tell anybody how great their product is (and I’m 61 years old btw!) However, I decided that your Spinach and Pine Nut pie was soooo delicious that you ought to know about it!”
Our veggie mission
At Higgidy, veg takes centre stage – it’s at the heart and soul of our recipes and is the source of inspiration for all our wonderfully unique and delicious flavours.
Our journey to celebrating the glory of veg isn’t just about the pies and quiches we make. We’re so passionate about veg that Camilla dedicated her second cookbook to it – ‘Higgidy: The Veggie Cookbook’. Packed with 120 delicious veg-packed recipes, Camilla helps zhoosh things up in the kitchen, and helps you experiment with veggies in new and simple ways.

Veg(an) with a side of veg
With veg being at the forefront of what we do, we set about launching our very first plant-based recipe back in 2019 – Creamy Mushroom & Kale Pie, made with vegan seeded spelt shortcrust pastry, portobello, chestnut & porcini mushrooms and kale, cooked in a creamy oat & pearl barley sauce, hand finished with a layer of puff pastry and quinoa.
This was only the beginning for our growing vegan range and we’ve since launched a variety of recipes. During Veganuary 2020, we launched our first vegan quiches including our Porcini Mushroom & Spinach Quiche and Spinach & Roasted Tomato Quiche. These were certainly well received by those missing flavours of a delicious quiche, and they contain no eggs, no milk and no cream, just pure plant-based ingredients. We’ve now grown our range of vegan recipes further, extending to a variety of scrumptious pies, quiches, rolls and even Mini No-Pork Pies.
Whilst we’ve grown the range, we’re certainly not stopping any time soon! We’ve got some exciting new recipes coming your way. One of which may be based on Indian cuisine – hint hint, wink wink. Keep your eyes peeled for more details soon!
We’d love to know your thoughts on any great vegan flavours you’d love to see, so let us know by emailing thekitchen@higgidy.co.uk.
