At Higgidy, it’s no secret that we love all things food. We especially appreciate the power of vegetables. From onions, peppers and mushrooms, to the humble cauliflower, which just so happens to be our favourite vegetable this month. Here’s why:
It’s said that cauliflower is the new kale. A powerful vegetable filled with goodness, that goes well with, or in, most dishes. Cauliflower is said to be full of nutrients such as fibre and vitamin C, K and B6. It is also a good source of anti-oxidants and anti-inflammatory’s – if you need a health kick, you know what to eat! There’s nothing better than something delicious with wonderful health benefits – good for the body and soul.
We love cauliflower for its versatility in the kitchen. It can be used as a star ingredient such as in our Cauliflower Cheese and Broccoli Quiche or in our Cauliflower Cheese Pie with a Thyme Crumb. In these, the cauliflower takes centre stage with its tender goodness to make a hearty meal full of veggie-power. Aside from some roasted vine tomatoes, there is little need for anything else on the plate.
Cauliflower can also make a standout side if you can’t quite handle its cauli-power as a main. Take our twist on the classic Cauliflower Cheese, with Brown Sugar Onions Recipe from The Higgidy Cookbook, for example. The addition of onions and pumpkin seeds creates a new layer of texture and taste, making the dish more of an event than the main itself. It’s a pleasing balance between a heap of healthy vegetables with some naughty but nice cheesy goodness.
Alongside the tasty treats we’ve already mentioned, cauliflower is a great low carbohydrate alternative to grains and legumes for those among us being conscious of what we eat (or if you’d just like to try something new)! For example, cauliflower rice is a filling replacement that can be swapped in to your curry, chilli or even a salad! It is also incredibly simple to make –just grate as much cauliflower as you want, then boil and season to your liking, or you can buy it pre-made in the shops. It can also be made into things such as a pizza base; a great option for vegans looking for an alternative, or for those wanting to re-invent their pizza.
The possibilities of what you can do with cauliflower are endless, and all of them yummy. It is healthy but more importantly has that feel-good factor when made into a delightful dish. What’s more, it grows well most of the year, and so is readily available in the supermarkets for you to get your hands on!
