Vintage Cheddar & Roasted Shallot Quiche

This quiche is made using a seeded spelt shortcrust pastry with Cheddar cheese, caramelised onions and a free-range egg filling, hand-topped with roasted shallots and a crispy onion & Cheddar crumb. We use a 14-month-old Cheddar from Barber’s in Somerset which makes this quiche extra rich and satisfying.
