Cauliflower ‘Popcorn’

In my experience, children love cauliflower and they love popcorn. As a result, these bite-sized deep-fried morsels of cauliflower, which look a lot like popcorn, go down a treat – and not just with kids. They’re best eaten immediately, although it’s unlikely anyone will hold back.

Equipment:

  • Large, heavy-based saucepan

Ingredients

  • 500ml Vegetable oil, for frying

  • 1 large cauliflower, broken into bite-size florets

For the batter

  • 250g plain flour

  • 2 garlic cloves, crushed

  • 2 teaspoons smoked paprika

  • 2 teaspoons ground turmeric

  • A good pinch of salt

  • 2 tablespoons chopped coriander leaves, plus extra to serve

  • 300ml cold sparkling water

  • Salt

Method

    Begin by making the batter. Place all the ingredients for it in a bowl, slowly adding the sparkling water and stirring until it forms a smooth, thick batter.

    Place the oil in a large, heavy-based saucepan over a medium-high heat. When hot enough, a pea-sized amount of battered cauliflower should sizzle immediately. At this point, dip the cauliflower florets into the batter and carefully lower them into the hot oil. Cook in batches if necessary so you don’t overcrowd the pan, for 2-3 minutes each batch. Flip regularly to ensure even cooking, until beautifully golden brown all over.

    Transfer the cooked cauliflower to a large plate lined with kitchen paper to absorb any excess oil. Once all cooked, sprinkle with chopped coriander and salt. Eat while still warm.
