Higgidy Festive Wreath

You can go to town here, depending on the veggies and fruits you can find. The recipe is just a guide and I’ve deliberately not given quantities, but I suggest investing in a large round board or flat plate to showcase your wreath.

Ingredients

For the wreath

  • Watercress or rocket leaves

  • Beetroot, peeled, roasted and quartered

  • Ripe figs, quartered

  • Soft white goats’ or sheep’s cheese

  • Radiccio leaves

  • Toasted walnuts or pecan nuts

  • Frisee lettuce leaves

For the dressing

  • ½ teaspoon Dijon mustard

  • 1 tablespoon white or red wine vinegar

  • 3 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper

    Whisk together the dressing ingredients

    Arrange the leaves, veggies, figs, cheese and nuts on a large circular board or platter in a wreath shape.

    Drizzle over the dressing and serve.
