Higgidy Festive Wreath
You can go to town here, depending on the veggies and fruits you can find. The recipe is just a guide and I’ve deliberately not given quantities, but I suggest investing in a large round board or flat plate to showcase your wreath.
Serves:
8-10Ingredients
For the wreath
Watercress or rocket leaves
Beetroot, peeled, roasted and quartered
Ripe figs, quartered
Soft white goats’ or sheep’s cheese
Radiccio leaves
Toasted walnuts or pecan nuts
Frisee lettuce leaves
For the dressing
½ teaspoon Dijon mustard
1 tablespoon white or red wine vinegar
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper

Whisk together the dressing ingredients

Arrange the leaves, veggies, figs, cheese and nuts on a large circular board or platter in a wreath shape.

Drizzle over the dressing and serve.
