Jordan, our super-talented Higgidy Chef, has created the ultimate cowboy caviar recipe, adding some delicious Welsh Blossom Honey from our friends at Hilltop Honey to help take this summery side to the next level. We’d recommend pairing with our best-selling Spinach, Feta and Red Pepper Quiche.
Cowboy Caviar, with a Higgidy twist. Enjoy!
Serves:
2-3Ingredients
100g sweetcorn
100g black bean, drained and washed
100g black eyed peas, drained and washed
1 red pepper, diced
1 onion, thinly sliced
1 avocado, diced
5 spring onion, sliced
1 red chilli, sliced
30ml olive oil
1 lime, juice and zest
20g coriander, ripped
50g feta, sprinkled at the end
Method

Combine the sweetcorn, black beans, black eyed peas, diced red pepper, sliced onion, diced avocado, sliced spring onion and sliced red chilli in a large mixing bowl.

Drizzle over the olive oil, Welsh Blossom Honey and lime juice.

Give all of the ingredients a good stir and top with some fresh coriander, lime zest and delicious feta (because everything’s better with feta!)

If you’re preparing this dish in advance, we’d recommend keeping this recipe refrigerated and to give it a good stir before tucking in.
