Very Green Fritters

This recipe is super speedy and flexible, so feel free to use whatever veg you happen to have lurking in the fridge or freezer!
Serves:
8 FrittersIngredients
2 tablespoons plain flour
200g courgettes, grated or spiralized
2 handfuls of baby spinach, washed and dried
1 small bunch of chives, very finely chopped
2 large eggs, beaten
30g Vegetarian hard cheese, grated
100g soft goats’ cheese
A knob of unsalted butter and a glug of oil, for frying
Salt and freshly ground black pepper
Method

Measure the flour into a mixing bowl, add the courgettes and toss them around to coat them in the flour. Add the spinach and chives and toss again to evenly distribute the veg.

Pour in the beaten eggs, season generously with salt and pepper and stir well. Add the Parmesan and crumble in the goats’ cheese, then stir again to combine.

Set a large frying pan over a medium heat and add the butter and oil. Once the fat is hot, carefully add dollops of the fritter mixture to the pan and cook for a couple of minutes, then flip over and cook for a further 2 minutes. Serve immediately.
Tip
Use potato flour in place of plain flour for a gluten-free option.
